Ingredients
  

Streusel topping

  • cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • 3 tablespoon salted butter, very soft

Cinnamon sugar

  • 3 tablespoon packed light brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon cocoa powder

Cake batter

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup mashed banana from about 2 medium ripe bananas
  • cup packed light brown sugar
  • 1 large egg, at room temperature
  • cup full fat sour cream, at room temperature
  • 6 tablespoon unsalted butter, browned
  • 1 teaspoon pure vanilla extract

Vanilla glaze

  • ½ cup powdered confectioner's sugar
  • 1 tablespoon whole milk
  • ¼ teaspoon ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F and line an 8x8-inch square baking pan with parchment paper, allowing the paper to hang over the sides about 2 inches for easy removal.
  • Brown the butter according to your preferred method.
  • Make the streusel by combining the flour, brown sugar, and cinnamon in a bowl, then adding the soft butter and rubbing it in until it forms crumbs. Cover and set aside.
  • Combine brown sugar, cinnamon, and cocoa powder to make the cinnamon sugar mixture and set aside.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt. In a large mixing bowl, mix mashed banana and brown sugar until smooth. Add the egg, sour cream, cooled browned butter, and vanilla, then mix well. Fold in the dry ingredients.
  • Spread two-thirds of the batter into the pan, sprinkle cinnamon sugar on top, dollop the remaining batter, and spread gently. Top with streusel.
  • Bake for 35-40 minutes until a toothpick comes out clean. Let cool completely.
  • Make the glaze by whisking together the powdered sugar, milk, and cinnamon until smooth. Drizzle over the slightly warm cake.

Notes

For a thicker topping, double the streusel recipe.
