- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 3 cups chicken broth
- 1 cup half-and-half
- 3 cups cooked chopped chicken
- 1 pound smoked or andouille sausage sliced and browned
- 2 cans red beans 15-ounce, rinsed and drained
- 1 can white corn 11-ounce, drained
- 2 cans chopped green chilies 4-ounce, undrained
- 2 tablespoons dried minced onion flakes
- ¼ teaspoon garlic powder
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1½ tablespoons Cajun seasoning
- 2 cups shredded pepper jack cheese
In a Dutch oven, melt the butter over medium heat, then stir in the flour. Cook for about 2 minutes.
Gradually whisk in the chicken broth and half-and-half. Bring the mixture to a boil and cook for 2 minutes, until it thickens.
Add the remaining ingredients, stirring occasionally, and cook for 10 to 15 minutes until heated through.
