  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cinnamon

Wet Ingredients

  • ¼ cup unsalted butter browned
  • ¾ cup dark brown sugar packed
  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Mix-ins

  • 2 cups old-fashioned rolled oats
  • ¾ cup sweetened shredded coconut
  • ½ cup semi-sweet chocolate chips
  • ½ cup chopped pecans

Instructions
 

Baking Instructions

  • Preheat the oven to 375ºF (191ºC) and line two large baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • Heat the butter in an 8-inch skillet over medium-high heat until golden brown and nutty in aroma, 1 to 2 minutes.
  • Transfer brown butter to a large bowl. Stir in cinnamon, brown sugar, granulated sugar, and oil until combined. Whisk in eggs and vanilla until smooth. Fold in flour mixture.
  • Stir in oats, coconut, chocolate chips, and pecans until well combined.
  • Divide the dough into 3 tablespoons sized pieces, roll into balls and place 2" apart on baking sheets. Flatten each ball to 2 ½" wide.
  • Bake for 8 to 10 minutes, rotating halfway. Edges should be set, lightly browned, with soft centers.
  • Let cookies sit for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Can make gluten-free by substituting with gluten-free flour and ensuring oats are certified gluten-free. Unbaked dough can be refrigerated for 2 days or frozen for 2 months. Store in an airtight container for up to 7 days.
