Base Ingredients
- 80 g butter, chopped
- 4 pieces streaky bacon rashers, finely chopped
- 1 pieces brown onion, finely chopped
- 3 cloves garlic, crushed
- 360 g fresh white breadcrumbs
- 2 tablespoon fresh thyme leaves
- ¼ cup fresh oregano leaves, finely chopped
- 3 teaspoon finely grated lemon rind
- 125 ml chicken stock
- 75 g dried cranberries, chopped
- 1 pieces egg, lightly whisked
- Small fresh thyme sprigs, extra to serve
Cooking Instructions
Preheat oven to 200°C/180°C fan forced. Line a large baking tray with baking paper.
Heat butter in a large frying pan over medium-high heat. Add bacon and onion, and cook, stirring occasionally, for 5 minutes or until onion softens. Add garlic and cook, stirring, for 1 minute or until aromatic. Transfer to a bowl.
Add breadcrumbs, thyme, oregano, lemon rind, stock, cranberries and egg to the onion mixture. Season and mix well to combine. Shape mixture into 4cm balls, pressing firmly, and place on the prepared tray. Spray with oil. Bake for 20 minutes or until browned and crisp. Serve sprinkled with extra thyme sprigs.
