Ingredients
  

  • 8 slices white bread ⅔ to ¾" thick
  • 1 cup milk (240 ml)
  • 2 large eggs
  • 2 large egg yolks
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon pure vanilla extract (5 ml)
  • ¾ teaspoon cinnamon
  • teaspoon nutmeg
  • ¼ teaspoon kosher salt (1 g)
  • 2 tablespoons unsalted butter (30 g)
  • ¼ cup powdered sugar (24 g)
  • 1 cup pure maple syrup (240 ml)

Instructions
 

  • If using soft, fresh bread, preheat the oven to 300ºF (149ºC) and warm the bread on a wire rack until dry, about 10 to 14 minutes.
  • In a large shallow bowl, whisk together milk, eggs, egg yolks, brown sugar, vanilla, cinnamon, nutmeg, and salt.
  • Soak the bread for 15 to 20 seconds on each side, then transfer to a baking sheet. Whisk the custard in between batches.
  • Heat a pan over medium-low heat, melt ½ tablespoon of butter, and cook two pieces of bread at a time until golden brown.
  • Right before serving, sprinkle powdered sugar on top and serve with maple syrup or desired toppings.

Notes

Refrigerate leftovers for up to 3 days, or freeze slices for up to 3 months. Reheat in a toaster oven or oven until hot.
