Ingredients
  

Salmon

  • 1 pound skinless salmon filet, cubed cut into one-inch cubes
  • salt and pepper to season
  • ½ cup soy sauce
  • cup honey
  • 3 cloves garlic, minced

Bowl

  • 1 cup shredded carrots cooked and divided
  • 2 cups broccoli florets cooked and divided
  • ¼ cup green onion, sliced
  • 2 cups white rice cooked and divided
  • sesame seeds for garnish

Instructions
 

Salmon

  • Cut the salmon filet into one-inch cubes and season with salt and pepper.
  • In a medium-sized bowl, add soy sauce, honey, and minced garlic. Whisk together until smooth. Reserve 2 tablespoons of marinade to brush on the salmon during cooking.
  • Add the salmon to the remaining marinade and toss to coat. Marinate for 15 minutes.
  • Place the marinated salmon bites in a single layer in the air fryer. Cook at 390 degrees Fahrenheit for 3 minutes.
  • Brush the reserved glaze on the salmon bites, close the basket, and cook for an additional 3 minutes until the internal temperature is 125-130 degrees Fahrenheit.

To Assemble

  • Enjoy the salmon over ½ cup of rice, with shredded carrots, broccoli florets, and green onion. Garnish with sesame seeds, and add a drizzle of additional soy sauce if desired.
