Salmon
- 1 pound skinless salmon filet, cubed cut into one-inch cubes
- salt and pepper to season
- ½ cup soy sauce
- ⅓ cup honey
- 3 cloves garlic, minced
Bowl
- 1 cup shredded carrots cooked and divided
- 2 cups broccoli florets cooked and divided
- ¼ cup green onion, sliced
- 2 cups white rice cooked and divided
- sesame seeds for garnish
Salmon
Cut the salmon filet into one-inch cubes and season with salt and pepper.
In a medium-sized bowl, add soy sauce, honey, and minced garlic. Whisk together until smooth. Reserve 2 tablespoons of marinade to brush on the salmon during cooking.
Add the salmon to the remaining marinade and toss to coat. Marinate for 15 minutes.
Place the marinated salmon bites in a single layer in the air fryer. Cook at 390 degrees Fahrenheit for 3 minutes.
Brush the reserved glaze on the salmon bites, close the basket, and cook for an additional 3 minutes until the internal temperature is 125-130 degrees Fahrenheit.
To Assemble
Enjoy the salmon over ½ cup of rice, with shredded carrots, broccoli florets, and green onion. Garnish with sesame seeds, and add a drizzle of additional soy sauce if desired.
