Ingredients
  

  • 1 pint cherry tomatoes halved
  • 16 ounces fresh mozzarella balls
  • ½ cup shaved Parmesan cheese
  • ¼ cup prepared pesto can reduce by 50% and add fresh chopped basil
  • sun-dried tomatoes optional
  • balsamic glaze drizzle, optional

Instructions
 

  • Gather all ingredients. Preheat the oven to 425 degrees F (220 degrees C).
  • Combine tomatoes, mozzarella, Parmesan, and pesto in a large bowl and mix well. Place mixture in a cast iron skillet or baking dish.
  • Bake in the preheated oven until bubbly, 15 to 20 minutes.
  • Top with a few sun-dried tomatoes and drizzle with balsamic vinegar glaze.

Notes

To minimize oil from pesto, you can decrease the amount of pesto by 50% and add enough fresh chopped basil instead for a total amount of pesto and fresh basil to equal ½ cup.
