Sushi Rice
- 1 cup sushi rice
- 1.5 cups water
- 1.5 Tablespoons unseasoned rice vinegar
- 1 Tablespoon cane sugar or agave omit for less sweetness
- 1 teaspoon sea salt
Spicy Mayo
- 0.5 cup high quality mayonnaise or Vegenaise
- 2-5 Tablespoons sriracha to taste
- 1 teaspoon toasted sesame oil
Spicy Salmon
- 2 cans wild salmon 6 ounces each, packed in water, drained
- 2 Tablespoons shoyu tamari or coconut aminos
- 1 teaspoon honey or pure maple syrup skip if using coconut aminos
- 1 clove garlic minced
- 2 Tablespoons spicy mayo made above
- 2 Tablespoons plain cream cheese or more regular mayo
- 2 scallions thinly sliced
- sea salt and freshly ground black pepper to taste

- sliced avocado
- thinly sliced or julienned cucumbers
Preparation
Rinse the sushi rice in a fine mesh sieve until the water runs clear. Transfer to a medium pot and add the water. Let the sushi soak for 30 minutes before cooking.
Bring to a boil, lower to a simmer, cover and cook for 18 minutes or until all water is evaporated.
Warm the vinegar, sugar, and salt in a small saucepan and stir until dissolved. Stir into the cooked rice and set aside.
Make the spicy mayo by combining mayo, sriracha, and sesame oil in a small bowl until smooth. Set aside.
Preheat the oven to 400°F (200°C).
In a medium bowl, break the salmon with a fork. Add shoyu, honey, garlic, spicy mayo, cream cheese, and scallions. Stir until combined. Taste for seasoning and add salt if needed.
Flatten the rice into a baking dish and sprinkle with furikake seasoning.
Spread the salmon mixture over the rice and drizzle with sweet sauce and/or more spicy mayo if desired.
Bake for 10 minutes, then broil for 2-3 minutes until the top has brown spots.
Top with suggested accompaniments or serve as desired.
