Equipment

  • large pot
  • large bowl

Ingredients

  • 16 ounce spaghetti
  • 0.5 pound uncooked medium shrimp peeled and deveined
  • 0.67 cup grated Parmesan cheese
  • 0.5 cup olive oil
  • 0.5 cup fresh lemon juice
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon salt
  • 0.5 cup frozen peas thawed
  • 0.25 cup chopped fresh basil
  • 1 tablespoon lemon zest

Instructions

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally, for 9 minutes. Add shrimp and cook for 3 more minutes. Drain.
  • Whisk Parmesan cheese, olive oil, lemon juice, pepper, and salt in a large bowl. Add spaghetti, shrimp, and peas to sauce. Sprinkle with basil and lemon zest; toss to coat.

Notes

This tastes just as good with cooked chicken in place of the shrimp. Just warm the chicken and add it with the basil and lemon zest. You can also leave out the shrimp and serve the pasta as a side dish with grilled meat or fish.
