Ingredients
  

Meatloaf Ingredients

  • 1.5 pounds Ground Beef, lean
  • 0.75 cup Seasoned Breadcrumbs
  • 1 large Egg
  • 1 medium Onion, diced I used a yellow onion
  • 3 teaspoon Garlic, freshly minced
  • 0.25 cup BBQ Sauce
  • 0.25 cup Tomato Sauce
  • 0.5 cup Frozen Peas
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.25 cup Parsley, chopped

Potato Topping Ingredients

  • 1.5 pounds Potatoes, peeled and quartered I used Red potatoes
  • 0.25 cup Heavy Whipping Cream
  • 4 tablespoon Butter
  • 1 cup Cheddar Cheese, shredded

Instructions
 

Cooking Instructions

  • Preheat the oven to 400°F.
  • In a skillet over medium heat, add the oil and sauté the onions until they are soft and translucent.
  • Stir in the garlic and sauté for another 30 seconds.
  • Remove the skillet from the heat and set aside to cool.
  • Once the onions have cooled, continue on.
  • Boil the potatoes until fork tender and drain.
  • In a mixing bowl, combine the ground beef, egg, breadcrumbs, tomato sauce and BBQ, along with the salt, pepper, and parsley.
  • Knead with your hands until completely mixed together.
  • Fold in the frozen peas.
  • Form the meat mixture into a loaf-shaped log.
  • Place the meat into a baking pan.
  • Bake for 30 minutes.
  • While the meat is cooking, blend the potatoes with the butter and heavy whipping cream.
  • Remove the meatloaf from the oven.
  • Spread the mashed potatoes over the top of the meatloaf and sprinkle the cheddar cheese on the potatoes.
  • Return to the oven and bake for an additional 5 minutes.

Notes

You can use seasoned mashed potatoes if you have a flavor such as Garlic and Cheese that you love making.
