Ingredients
  

  • 2 ½ cups diced potatoes
  • ¾ cup shredded Cheddar cheese
  • ½ cup crumbled cooked bacon
  • ½ cup diced onion
  • cup mayonnaise
  • 2 cloves garlic, pressed
  • salt to taste
  • freshly ground black pepper to taste
  • ¼ cup chopped green onions for topping

Instructions
 

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.
  • Combine potatoes, cheese, bacon, onion, mayonnaise, garlic, salt, and pepper in a large bowl. Transfer to the prepared dish.
  • Bake until potatoes are fork tender, about 1 ½ hours. Top with green onions.

Notes

The easiest way to cook a small amount of bacon is in the microwave.
