Main Ingredients
- 8 large shrimp thawed, peeled, and deveined
- ½ ripe avocado cut into bite-sized pieces
- 2 teaspoons sesame oil
Stir-fry Sauce
- 2 tablespoons mayonnaise
- 2 teaspoons wasabi
- 1 teaspoon soy sauce
Preparation
Thaw, peel and devein the shrimp. Remove tails and pat off any moisture.
Cut the avocado into bite-sized pieces.
Mix together mayonnaise and wasabi in a small bowl. Set aside.
Cooking
Heat sesame oil in a frying pan over medium heat.
Add shrimp and cook for 1 minute on each side.
Add avocado pieces.
Stir in mayonnaise & wasabi mixture and coat well.
Add soy sauce and give it a final stir.
Serve over hot rice and enjoy.
