Ingredients
  

Liquids

  • 32 oz chicken broth store-bought or homemade
  • 28 oz diced tomatoes with herbs and spices (don't drain)

Lentils and Vegetables

  • 1 cup dried brown lentils rinsed
  • 1 medium onion diced
  • 1 large carrot peeled and chopped
  • 1 large stalk celery chopped
  • 2 cloves garlic minced

Protein

  • 10 oz fully cooked chicken sausage links in thick slices

Herbs and Seasoning

  • 1 teaspoon dried thyme or 2 large sprigs fresh thyme
  • sea salt or Kosher salt and freshly ground black pepper, to taste.
  • ¼ cup fresh parsley leaves chopped

Instructions
 

Preparation

  • Chop the onion and vegetables, mince the garlic, and slice the cooked sausage.
  • Add the broth, tomatoes with their liquid and all remaining ingredients except fresh parsley and salt and pepper to the bowl of a slow cooker.
  • Cover with a lid and cook on low for 7.5 to 8 hours or 4 hours on high or until the lentils are tender.
  • Taste and season with salt and pepper if necessary. Ladle into bowls and garnish with freshly chopped parsley.
