Liquids
- 32 oz chicken broth store-bought or homemade
- 28 oz diced tomatoes with herbs and spices (don't drain)
Lentils and Vegetables
- 1 cup dried brown lentils rinsed
- 1 medium onion diced
- 1 large carrot peeled and chopped
- 1 large stalk celery chopped
- 2 cloves garlic minced
Protein
- 10 oz fully cooked chicken sausage links in thick slices
Herbs and Seasoning
- 1 teaspoon dried thyme or 2 large sprigs fresh thyme
- sea salt or Kosher salt and freshly ground black pepper, to taste.
- ¼ cup fresh parsley leaves chopped
Preparation
Chop the onion and vegetables, mince the garlic, and slice the cooked sausage.
Add the broth, tomatoes with their liquid and all remaining ingredients except fresh parsley and salt and pepper to the bowl of a slow cooker.
Cover with a lid and cook on low for 7.5 to 8 hours or 4 hours on high or until the lentils are tender.
Taste and season with salt and pepper if necessary. Ladle into bowls and garnish with freshly chopped parsley.
