Ingredients
  

Cauliflower

  • 1 head cauliflower regular, may double for a large head

Batter

  • 1 cup gluten free flour mix or regular flour if not gluten free
  • 1 cup non-dairy milk unsweetened or original flavour
  • ½ teaspoon sea salt
  • ¾ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon crushed red pepper flakes 1 teaspoon for spicy, leave out if dislike spice
  • 2 cups gluten free breadcrumbs crispy/panko, seasoned with salt & pepper

Sauce

  • cup maple syrup (10 tablespoons)
  • 6 tablespoons low sodium soy sauce or liquid aminos
  • 1 teaspoon sesame seeds
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground ginger
  • 2 teaspoons cornstarch plus 2 teaspoons water for slurry
  • ½ cup water
  • chopped scallions for garnish
  • additional sesame seeds for garnish

Instructions
 

Preparation

  • Preheat oven to 450°F/230°C. Prepare a baking sheet by lining it with a silicone baking sheet or greased foil.
  • Remove florets from the cauliflower and chop into smaller pieces to resemble wings.
  • In a separate bowl, whisk the gluten-free flour, non-dairy milk, salt, black pepper, and garlic powder to make the batter. Adjust consistency with more milk if necessary.
  • Place breadcrumbs in a separate bowl. Line it up beside the batter bowl.
  • Toss the cauliflower in the batter mixture to coat completely, then transfer to the breadcrumbs to coat each wing, placing on the baking sheet.
  • Bake for 22 minutes. While baking, prepare sauce ingredients by whisking together.
  • Once baked, toss wings in the cooled sauce to coat before placing back on the baking sheet. Bake for another 5 minutes.
  • Remove from oven and serve immediately. Enjoy!

Maple Ginger Sauce

  • In a pan over medium-high heat, mix all sauce ingredients, whisking to dissolve cornstarch. Bring to boil, then simmer for about 5 minutes until thickened.
  • Taste test and adjust sweetness/saltiness if needed. Remove from heat and cool until needed.

Notes

These are best served fresh and hot, with optional garnishes of scallions and sesame seeds.
