Ingredients
  

  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 Tablespoons oil
  • 1.5 teaspoons salt
  • 0.5 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef
  • 1 packet taco seasoning
  • water amount called for on the back of the taco seasoning packet
  • 8 ounces Mexican shredded cheese
  • Optional toppings pico de gallo, guacamole, sour cream

Instructions
 

  • Coat the russet potatoes in oil.
  • Season potatoes with salt, pepper, garlic powder, and onion powder, mixing to coat evenly.
  • Cook potatoes in air fryer at 400F for 18-20 minutes, shaking the basket 2-3 times during cooking.
  • Brown and crumble the ground beef, drain excess grease. Add taco seasoning and water, cooking according to packet directions. Remove from heat.
  • To serve, layer cooked potatoes, topped with seasoned ground beef, then top with Mexican shredded cheese and optional taco toppings.
