- 2 pounds russet potatoes, peeled and small diced
- 3-4 Tablespoons oil
- 1.5 teaspoons salt
- 0.5 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pound ground beef
- 1 packet taco seasoning
- water amount called for on the back of the taco seasoning packet
- 8 ounces Mexican shredded cheese
- Optional toppings pico de gallo, guacamole, sour cream
Coat the russet potatoes in oil.
Season potatoes with salt, pepper, garlic powder, and onion powder, mixing to coat evenly.
Cook potatoes in air fryer at 400F for 18-20 minutes, shaking the basket 2-3 times during cooking.
Brown and crumble the ground beef, drain excess grease. Add taco seasoning and water, cooking according to packet directions. Remove from heat.
To serve, layer cooked potatoes, topped with seasoned ground beef, then top with Mexican shredded cheese and optional taco toppings.
