The Chocolate Chip Cookies of my dreams

Ingredients
  

Wet ingredients

  • 225 g unsalted butter, cut into 1cm cubes
  • 1 cup brown sugar (light brown sugar), tightly packed
  • ½ cup caster sugar (superfine) sub regular/granulated
  • 1 large egg at room temp
  • 1 yolk from a large egg at room temp
  • 1 teaspoon vanilla extract

Dry ingredients

  • 2 cups plain flour (all-purpose flour) spooned and levelled
  • 3 teaspoon cornflour (cornstarch) tightly packed
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda sifted if lumpy
  • ½ teaspoon cooking salt (kosher salt) halve for table salt

Choc chips

  • 1 ½ cups dark chocolate chips (semi-sweet) plus extra for decorating
  • ¾ cup milk chocolate chips

Instructions
 

Browned butter

  • Put the butter in a saucepan over medium high heat. Simmer for 4 to 5 minutes until golden and nutty.
  • Pour into a heatproof bowl and cool to room temperature.

Dough

  • Whisk the dry ingredients in a separate bowl.
  • To the browned butter, add both sugars and mix. Then add the egg, yolk, and vanilla.
  • Add the dry ingredients and mix until incorporated, then stir in choc chips.
  • Measure out dough portions, roll into balls and shape into discs.

Chilling

  • Refrigerate the discs for 12 hours to 48 hours.

Baking

  • Preheat the oven to 180°C/350°F.
  • Place 4 fridge-cold cookies on a tray lined with baking paper.
  • Bake for 17 minutes until edges are golden.
  • Press extra choc chips on top and cool on tray for 20 minutes.
  • Transfer to a rack to cool fully before storing.

Notes

For best results, use scales and do not skip the 12 hour dough chill.
